I was just wondering which cards would say "I love you", a declaration of love or even a proposal.

What cards say that for you?

Knight of Cups I see normally as a proposal card.

I love you cards for me are Ten of Cups, Ace of Cups, and 2 of cups.

Lovers?

It depends on the deck, but I'd go for the Lovers - the decision for one person, and I agree that Knight/Cups is the man driven by love, and 2/Cups a union of love.

The Lovers
Also the Four of Wands can mean marriage (stablizing the energies of the couple).
