How are these different from essential oils?

Essential oils are compounds extracted from the plant material. They are very concentrated, the idea is that all the fragrant nature of the plant, for example, is contained within them.

Essences are pretty much the opposite. They are very diluted solutions, usually of water preserved with alcohol, and a tiny amount of the plant material and "spirit" or essence.
